The design of the 2000 series makes outdoor cooking simpler, much more efficient and just plain easier with these modern ceramic cooker/grills. And by adding gas, as a fuel source, the 2000 series removed the chimney and thus removed almost all the airflow through the unit itself. Less airflow means less moisture leaves and so the food stays much juicer than with metal units that have more airflow than a day in Chicago. You will easily notice chicken, turkey, roasts, and ribs all come out juicer than before. The ceramic design also allows a wider range for errors in cooking times vs temperatures so you will not ruin your meal nearly as easily. The reduced airflow means no flare-ups and so no burnt meals plus the food won't dry out as you cook it, like on regular grills. The efficient design and use of ceramics means very little heat loss so your fuel will last many times longer than what you are use to with metal grills or smokers. You can shut the 2000 off and it will keep your meal hot for a very long time - or until your late guests show up. Winter cooking doesn't even bother the Primo's. The ceramic design means low heat loss so you can smoke/grill in the dead of winter just as if it were summer - try that on a metal water smoker. Cooking Low&Slow is easy with the 2000 because you can set it for 190°-225° and let it cook all night without worrying about the fire going out.
