Baby Back Ribs on the Oval

 300° indirect for 4.5 hrs

#1 I am starting off with two racks of baby back ribs. I have cut them in half to make it easier to work with. I have removed the membrane and coated with Nature Boy's Dizzy Pig Rib Rub. Sometimes I coat with yellow mustard (after the rub) but not this time.

 

#2 Here is my Oval on the lower deck looking out at the Atlantic ocean. I am doing the ribs at 325° deg indirect.

 

#3 Here they are after 3.5 hrs at 325°- now I start adding sauce. You can see my Oval has not done much work yet. It is big but doing these 2 racks is easy since you are only using 1/2 the firebox.

 

#4 Here they are - 2 racks of baby backs with my own sauce baked on for the last 1 hour.

The meat temp was 195 deg and the meat pulled clean from the bone. These were the best ribs I think I have ever done - no fooling! They were easy too - no foil like I usually use for great ribs. The Oval is my new rib cooker!! I love this thing!

Nature Boy and BBQfan1 have a great rub with the Dizzy Dust - TRY IT!!!!!!!!!


2 Racks of baby backs on the Oval

#6 Pictured here is another rib cook. I have 2 full racks cut in half and placed in the rib rack - indirect. I am cooking at 300° for approx 4hrs. They are rubbed with Reg. Dizzy Dust.


 

#7 After 2 hrs I flip them in the rib rack
Meat temps are now 144°-155°


 

#8 The finished product. Cooked for 3.5 hrs at 300-315° and had a final meat temp of 185°. I added sauce for the last hour and used my sauce recipe.

 

 

6 racks of baby backs

 

The bottom two pictures (#9 & #10) are 6 racks of baby backs cut in half and placed around the oval on three racks. I did these the 3-1-1 method at 275° for 5 hrs. I used a 50/50 mix of Shakes sauce and KC Masterpiece.

#9 is after 2 hrs indirect at 275°.

#10 here they are after they came out of the foil and went indirect for 15-20 min, now they will start getting sauced in the 40-50 min.
