Pizza

I use a Plate setter with a pizza stone on top. Dome temp is 550-575 deg so the toppings cook. I heat the setter up with the fire to 550 deg then add the stone when all smoke has stopped. Allow the stone to preheat 10 min - add pie with a pizza peel.

 

Here is the results after 12-14 min. Peak at the crust now and again to check for doneness (don't open the dome all the way, just peak a little). This also works for premade or self rising crusts.

The bottom picture was sent in by WailingAngusBeef from the forum and it shows his pizza setup in his Primo 2000 gas grill. There are many setups and temps that will work, this one works for him. 550° dome temp until done.

Normally I have to load up my peel with flour and corn meal so the pie slides on and off easily. The resulting pie is often full of burnt corn meal and lots of powdery dough from all the flour. I did two large pies tonight and the first was a little uneasy getting it to slide onto the stone. It was a small learning experience, the second one was smooth as silk and just plain perfect. Gary, this tool is wonderful - just wonderful!! I have had many pies in the past that did not want to get onto the peel without a lot of effort. The Super Peel made it easy.
