Lighting Your Primo Grill and Smoker






Fully open the dome top and remove the cooking grate.

Either use a paraffin stick, crumpled newspaper sheets, or an electric lighter to start the fire. If you use a paraffin stick, simply place in between the natural lump charcoal. If you use crumpled newspaper sheets, place them on the ceramic fire grate and add 3-6 hand fulls of natural charcoal. You may also use a chimney starter for the newspaper sheets.

Open the bottom draft door and the metal slide top completely. Light your newspaper or your paraffin stick. If you use an electric starter, simply place with natural coal and plug it to an electrical outlet. In any case, never use lighting fluids. The use of starter fluids will void your warranty. The air flow will help light the charcoal.

Check the thermometer often during the heat-up of the cooker. Keep the draft doors open during this process. When the temperature approaches the desired setting, adjust the top and bottom dampers to set the temperature. You may gradually close the top damper first and then the bottom damper.

When the temperature is set, put your food on. After a few times using the cooker, you will be able to control the temperature with more ease. When you are finished cooking, completely close the bottom draft door and the metal slide top. This will extinguish the fire and allow you to use it again.

Since your Primo Grill is made out of ceramic, it holds the heat better and longer. Due to this, if the cooker gets too hot it may take longer to lower the temperature. Therefore, when cooking it is very important to constantly monitor the dampers when wanting to reduce the temperature.

For the best cooking results, use a meat thermometer when cooking large pieces of meat such as beef, ham, turkey, whole chickens, etc. The use of a meat thermometer will allow you to determine if the meat is cooked properly and safely.
