Stuffed Cheesy Bacon Pull-Apart Bread

Primo scores big with this easy, cheesy, bacon bread that's perfect for the big game day or any weekend gathering. And for that hard to please crowd we have two variations!

The Ingredients

  • 1-3 sourdough loaves, about 12-inches long

Per Loaf:

  • 1/2 cup salted butter with 1/2 teaspoon granulated garlic
  • 8-10 strips crispy bacon, chopped
  • 1/2 cup chopped green onions
  • 3 cups shredded Colby or mozzarella and cheddar
  • 1 tablespoon minced parsley
  • Freshly grated parmesan for any version of stuffed bread

Variation 1:

  • Fry until crispy thin slices of Salami, Prosciutto, Capicola or similar salami
  • 1/2 cup salted butter
  • 1/2 teaspoon granulated garlic with 1/2 teaspoon Italian herb seasoning
  • 3 cups shredded mix mozzarella or Italian cheese blend
  • 1 tablespoon minced basil

Variation 2:

  • 1 cup sautéed mushrooms with leeks
  • 1/2 cup salted butter with 1/2 teaspoon granulated garlic
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cups shredded mix mozzarella or gouda or Italian cheese blend
  • Fresh thyme leaves or basil

Preparation Instructions

  1. Use a serrated knife to cut an 1-inch cross-hatch pattern into the bread in a diagonal pattern. Do not dcut all the way through to the bottom crust.
  2. Combine the melted butter, granulated garlic, and/or red pepper flakes.
  3. Gently separate the bread with your fingers, and overstuff it with your favorite toppings from above. Drizzle the melted butter mixture in between the cuts.
  4. Wrap the loaf of stuffed bread in heavy cut aluminum foil that has been spread with non-stick cooking spray. Make sure to have the seem of the foil on top of the bread loaf.

Cooking Instructions

  1. Heat grill to 350ºF and set up for indirect cooking using Primo heat deflector plates.
  2. Place a Fredstone over the grill grates for added success when baking.
  3. Place the bread on the Fredstone or on the grill grates, close the lid, and bake at 300-350ºF indirect heat for 20 minutes.
  4. Open just the top foil with two forks, and bake an additional 8-10 minutes or until all of the cheese has melted. Sprinkle with chopped onions or herbs. Serve with ranch or blue cheese dressing.
