These delicious little Cajun Shrimp & Sausage Bites from Matt Ramsey @cookerofdeliciousness work well as a side or an entrée. Serve alone or as a salad topper.
Shrimp Ingredients
- 2 lbs jumbo shrimp (peeled and deveined)
- 1 lb conecuh Cajun sausage
- Cajun or Creole seasoning
- Wood toothpicks
Sauce Ingredients
- 6 tbsp unsalted butter
- 1 heaping tbsp “Jarlic”
- 1 tbsp Cajun or Creole seasoning
- 3/4 cup Hot Honey
Preparation Instructions
- Soak wood toothpicks for 30 minutes in water.
- Peel and devein the prawns.
- Pre-heat Primo Ceramic Grill to 400°.
- Cut sausage into pieces approximately the same width as shrimp.
- Use a toothpick to pierce the shrimp, through sausage, and into other side of shrimp.
- Season with Cajun seasoning on both sides.
Cooking Instructions
- When the grill is to temp, combine ingredients for sauce into pan and allow to melt (can be done on stovetop) and have ready next to grill.
- Place shrimp and sausage bites on wire rack and transfer to grill.
- Close the lid for around 90 sec, then open and brush on sauce. Flip bites and brush sauce on other side.
- Cook over open flame 1-2 min then remove.
- Allow to cool slightly and enjoy!
Chef's Notes
Pat your sausage and shrimp dry before seasoning to remove moisture. Moisture on the shrimp's surface will cause them to steam as opposed to sear.
